Meanwhile, Frasier and Niles accidentally injure many of the waiters and render them unable to keep working. When they find out what the other has been doing, they get into an argument that results in the head chef walking out. Unfortunately, things go south when Frasier and Niles give the chef contradictory instructions for the dessert. Opening night starts out strong, with a good turnout and great food, thanks to the Cranes snatching a dissatisfied chef from another restaurant and making him head chef of their kitchen. The restaurant reopens under the Crane brothers' management as "Les Freres Heureux" ("The Happy Brothers") Otto has been rehired as a car valet. Seeing potential in the restaurant, Frasier and Niles decide to buy the restaurant and restore it, despite Martin and Daphne's warnings of how much hard work owning a restaurant is. However, they are disappointed to find out that, as Gil said, the restaurant has become a shadow of its old self the interiors are run down, and the elderly waiter Otto, who was once famous for his excellent memory, is now senile and confused. Since Frasier and Niles both have happy memories from the restaurant from their childhood, Frasier takes him, Martin and Daphne out for dinner there before they close.

All of the guests flee and Gil happily prepares to write a terrible review, and Martin cannot resist teasing his sons about their latest foolhardy failure. Matters grow worse when Gil arrives with a pack of his critic friends, and as the team frantically tries to prepare Orsini's signature eel dish, Roz ends up setting off the sprinklers with her failed dessert, and Otto – serving as valet – creates a "drive-through" right in the dining-room wall. Everything starts to go south when the brothers accidentally knock out their waiter and annoy head chef Maurice into quitting, however, and they are forced to recruit Martin, Daphne and a resentful Roz to fill in as staff members. "Les frères heureux" proves to be "a palpable hit" on opening night, though Frasier and Niles are annoyed when Bulldog shows up sans reservation. Niles and Frasier then get the idea to buy the place themselves, feeling that they are sufficiently knowledgeable about matters of food and classy presentation, and they ignore Martin's protests that running a restaurant is very hard work indeed. He, Niles, Martin and Daphne decide to have one last farewell dinner, though they find that the restaurant – and addled head waiter Otto – have indeed fallen into poor condition. In this episode, Frasier is disappointed to learn from snooty restaurant critic Gil Chesterson that Orsini's, one of his former favorite dining establishments, is set to close.
